The malolactic fermentation takes place mainly in large stainless steel tanks, and the wine then spends about 15 months in oak barrels(of which some 50-60% are new) before bottling.
Of all the wines they produce, probably the most famous is the Assyrtiko fermented in oak barrel, which means that just to prove it, it is worth going to the location of this winery.
Contrary to popular belief, this is not to lend a woody, tanin or vanilla flavour; oak casks are neutral and Krug vins clairs, or base wines, do not age in oak casks- they are simply born there.
Vinification: Wine made from grapes harvested by hand. The fermentation was conducted with indigenous yeasts and full macerated with skins. Malolactic fermentation was made in oak barrels with successive stirring of the lees.

In the springtime, when the cuvées are created, Bellavista has at its disposal a selection of roughly ninety base wines, part of which have been fermented in small oak casks.

The nose has hints of BlackBerry and ripe red fruit, with pleasant balsamic(Rosemary) and hints of liquorice and chocolate, donated by aging in small oak barrels for one year.
